The Best Pizza I Ever Ate..

I’d like to take a brief moment to pay homage to the best pizza I’ve ever eaten. Let me begin by saying I love wood fire pizza. The real stuff. Not this shit that comes with cinnasticks or shitty cookie pizzas, the real stuff. San Marzano tomato sauce, fresh mozzarella and Basil. Settebello does that. They get me. Like, if you’re reading this, call me.

Naturally, when I saw some full on Brisket Porn dropped on their Instagram page it peaked my interest to say the least. They went there. Full on south meets…well, Italy. The brisket pizza. It has been a think of dreams in many other parts. There are many pretenders and few that can truly contend.

I pulled up from lunch on my typical Fat Friday. Not only did I sip out on works Potluck, I stole an extra 15 minutes from “the man” just to savor this masterpiece.

As you, know, the pizza consists of brisket but it also has fresh mozzarella, Fontina, caramelized onion and garlic. That’s it. What did I say in my last post? “Keep it simple stupid.” And they did. And they did it right yet again. I can’t even describe it.

It was the equivalent of having all your endorphins release on your tongue at the same time. It was salty, savory, rich and flavorful all at the same time. The brisket melted, as did the cheese. The onions were truly caramelized and they even added just a hint of chili oil to balance it all out.

They hit it out of the park on this one. There will be substitute. If you take anything from me, take this advice and get this pizza yesterday. Unless you hate me and refuse (but then I win twice).

P.S. If you look at this pizza and don't get a boner, it's probably because you take nitrates for chest pains and should consult your doctor.
