Barbacoa de Camblin (Recipe)
I made this with 30 minutes to spare before works while cooking eggs this morning. I literally threw everything in a crock-pot for 8 hours and perfection followed. You can go to allrecipes.com if you want but this Irish-American may have just one upped our friends south of the border with this one. You'll be saying "Damnnnnnn Danielllll" because I'm back at it again.
Ingredients:
1.5-2lbs of Beef Boneless Country Spare Ribs, Chuck or Flank Steak (your preference)
2 cups Beef Broth
1 can medium chipotle sauce 8oz
1 can of tomatoes with chili and lime 16oz
½ cup apple cider vinegar
½ cup brown sugar
Half a red onion
2-3 Cloves of Garlic
1 Serrano Pepper (if you don’t like it spicy leave out)
2 teaspoons cumin
2 bay leaves
2 teaspoons garlic powder
Juice of 1 lime
Salt & pepper
Optional: Liquid smoke (trust me, not optional when you taste it with)
Directions:
Throw your previous conceptions of Barbacoa out of the window; I did it my own damn way (Trust me, I’m Irish).
Throw everything in the crock-pot on low for 8 hours.
Reserve as much of the liquid as you can and place in a blender until pureed.
Add contents to a saucepan, bring to a boil and reduce on stove for about 30 minutes.
Reintroduce with beef and let stoop in crock-pot for a few minutes or until you grab another cerveza. Pro Tip: Modelo.
Grab it with your hands and eat it like a baby eats cake on its first birthday. Pay not attention to the 3rd degree burns. Rinse and repeat.
